The grapes were harvested between 2am and 7am being the coolest part of the night but were fermented separately. The Sauvignon Blanc was cold soaked for 24 hours prior to pressing to help extract the important fruit characteristics from the grapes skins. The musts were then slowly and lightly pressed with only the first fraction being kept for production. The juice from each varietal was then cold fermented between 12 and 15°C in stainless steel and without any wood contact.

This classic Australian white wine blend shows lively lime and citrus fruit characters supported by good acidity and a lengthy finish. The winemaker’s use of Semillon will allow this wine to evolve gracefully over several years.

Serving Suggestions: Serve lightly chilled on its own or with salads, quiche, fish or poultry dishes, delicious with shellfish and also white fish dishes.

Company Profile:
The name Cranswick Estate is synonymous with an elegant and much revered bird, the crane, whose natural habitat is sparsely populated wetland areas. The Cape York peninsular, where the cranes over winter and breed, is home to over half of Australia’s known bird species, including the rare Sarus crane.

The Cranswick brand was created in 1991 when Graham Cranswick-Smith initiated a management buy-out of Diageo's bulk winemaking facility in the Riverina region of New South Wales, Australia.  Since then Cranswick has transformed from producing bulk wine for major Australian producers to producing and marketing it's own broad range of Australian varietal wines, with a strong reputation for excellent quality and outstanding value for money.

Cranswick Wines are expertly made to capture the ripe fruit flavours and to reflect the very best of Australian winemaking. Our grapes are sourced from selected vineyards across Australia and demonstrate the new elegance of contemporary Australian wines. All of our vineyards are under long term contracts and managed in a sustainable fashion with attention focused on fruit quality through canopy management and relatively low yields.

Spotlessly clean; quite ripe nectarine/citrus fruit, with more depth than is usual for Tumbarumba; the substantial amount of new French oak has been absorbed by the fruit.
